Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and sugar. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sour cream, espresso powder, and vanilla; mix until combined.
  3. Add eggs one at a time, mixing on low speed until just blended.
  4. Pour filling over crust and bake for 45-50 minutes, until set around edges but slightly jiggly in center.
  5. Let cool at room temperature before chilling in the refrigerator for at least four hours or overnight.
  6. Slice and serve chilled, garnished with whipped cream or chocolate shavings.
