  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 medium yellow onion, chopped
  • 4 tbsp unsalted butter
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 sheets puff pastry
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish with nonstick spray.
  2. Sauté the onion and carrots in melted butter over medium heat for about 5-7 minutes until soft.
  3. Add diced chicken and cook until no longer pink. Stir in flour to create a roux.
  4. Gradually add chicken broth while stirring until smooth. Then stir in peas, cream, thyme, parsley, salt, and pepper. Simmer for 5 minutes.
  5. Pour filling into the baking dish and cover with puff pastry. Cut slits on top for steam to escape.
  6. Bake for 25-30 minutes until golden brown. Let cool slightly before serving.
