  • 1 cup full-fat coconut milk
  • 1 cup water
  • ½ teaspoon salt
  • Optional garnishes: fresh cilantro, lime wedges, or toasted coconut flakes

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice, coconut milk, water, and salt. Stir gently.
  3. Bring to a boil over medium heat, then reduce heat to low and cover the pan.
  4. Simmer for 15-20 minutes until all liquid is absorbed. Avoid lifting the lid during cooking.
  5. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork before serving.
