  • 34 boneless, skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 2 shallots, minced
  • 1 cup dry Marsala wine
  • 1 cup low-sodium chicken broth
  • Olive oil for cooking
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium-high heat and add olive oil.
  2. Season chicken breasts with salt and pepper; sear on each side for 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, sauté shallots until translucent, then add mushrooms and cook until golden.
  4. Deglaze with Marsala wine, scraping the bottom of the pan; simmer for 2 minutes.
  5. Stir in chicken broth and return the chicken to the skillet; simmer for an additional 5 minutes.
  6. Serve hot, drizzling sauce over the chicken.
