  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium sweet onion, diced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 8 slider buns
  • Butter for toasting

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine garlic, onion, chipotle peppers, and chicken broth. Add chicken breasts and marinate for at least one hour.
  3. Cook the marinated chicken in a slow cooker on low for 6 hours or an Instant Pot on high pressure for 15 minutes.
  4. Shred the chicken with two forks and drizzle with lime juice and soy sauce.
  5. Butter each slider bun and toast in a skillet until golden brown.
  6. Assemble sliders by adding shredded chicken to each bun and serve with optional toppings like cilantro.
