- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese (divided)
- 2 green onions, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- In a bowl, mix shredded chicken, cream cheese, buffalo sauce, half of the cheddar cheese, salt, and pepper until smooth.
- Generously stuff each bell pepper with the filling mixture.
- Place stuffed peppers upright in a baking dish. Drizzle with olive oil and top with remaining cheddar cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden. Garnish with chopped green onions before serving.
