Description

Savor the bold taste of buffalo chicken stuffed within tender bell peppers, topped with melty cheese—ideal for game nights or cozy family dinners!


Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese (divided)
  • 2 green onions, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a bowl, mix shredded chicken, cream cheese, buffalo sauce, half of the cheddar cheese, salt, and pepper until smooth.
  3. Generously stuff each bell pepper with the filling mixture.
  4. Place stuffed peppers upright in a baking dish. Drizzle with olive oil and top with remaining cheddar cheese.
  5. Bake for 25-30 minutes until the cheese is bubbly and golden. Garnish with chopped green onions before serving.
