Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan over low heat, melt 1 cup of sugar until golden brown to create caramel. Pour into a round baking dish and swirl to coat the bottom.
- Whisk together 4 eggs in a mixing bowl until frothy. Add 1 can of sweetened condensed milk, 1 can of evaporated milk, 1 tablespoon vanilla extract, and lemon zest. Mix until smooth.
- Pour the egg mixture over the hardened caramel in the baking dish; do not stir.
- Place the baking dish in a larger roasting pan filled with hot water halfway up the sides of your dish.
- Bake for 50-60 minutes or until a knife inserted comes out clean.
- Let cool at room temperature before chilling in the fridge for at least 4 hours. To serve, run a knife around the edges and invert onto a plate.
