  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, cream softened butter with granulated and brown sugar until fluffy.
  4. Beat in the egg and vanilla until combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized balls of dough onto baking sheets and create an indentation in each using your thumb.
  7. Bake for 10–12 minutes until edges are set but centers remain soft; cool slightly on wire racks.
  8. For the ganache, heat heavy cream until simmering, then stir in dark chocolate chips until melted and smooth. Fill each cookie’s thumbprint with ganache and allow to set before enjoying.
