  • 1 lb flank or sirloin steak
  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the steak by mixing olive oil, lemon juice, garlic, salt, and pepper. Add the steak and let it marinate for at least 30 minutes.
  2. Rinse quinoa under cold water and cook with 2 cups boiling water until fluffy (about 15 minutes).
