- 1 lb lean ground beef
- 1 cup plain breadcrumbs
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 4 cups low-sodium beef broth
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, mix ground beef, breadcrumbs, eggs, parsley, onion, garlic, salt, and pepper until just combined.
- Heat olive oil in a skillet over medium heat; sear meatballs until browned on all sides (5-7 minutes). Remove and set aside.
- In the same pot, sauté carrots and potatoes for 3-4 minutes until slightly softened.
- Add beef broth and canned tomatoes; bring to a gentle boil while scraping the pot.
- Return meatballs to the pot, reduce heat to low, cover, and simmer for 30-40 minutes.
- Taste and adjust seasonings before serving.
