Ingredients

  • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 4 cups low-sodium beef broth
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, eggs, parsley, onion, garlic, salt, and pepper until just combined.
  2. Heat olive oil in a skillet over medium heat; sear meatballs until browned on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté carrots and potatoes for 3-4 minutes until slightly softened.
  4. Add beef broth and canned tomatoes; bring to a gentle boil while scraping the pot.
  5. Return meatballs to the pot, reduce heat to low, cover, and simmer for 30-40 minutes.
  6. Taste and adjust seasonings before serving.
