  • 1 ½ cups Medjool dates (about 1215 dates, pitted)
  • 1 cup almond flour
  • ¼ cup refined coconut oil (melted)
  • 2 tbsp maple syrup
  • ¼ tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Pit the Medjool dates if not already pitted. Soak them in warm water for 10 minutes until soft.
  3. In a mixing bowl, combine almond flour and melted coconut oil until crumbly. Stir in maple syrup and sea salt until evenly mixed.
  4. Press the mixture into the lined baking dish to form an even base layer.
  5. Drain soaked dates and blend in a food processor until smooth; add maple syrup to taste if desired.
  6. Spread the date caramel over the base layer evenly, smoothing it out with a spatula.
  7. Refrigerate for at least 1 hour until set before slicing into bars.
