  • 3 medium Yukon Gold potatoes, diced
  • 2 stalks celery, chopped

  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables into uniform pieces.
  2. In a skillet over medium-high heat, sear the beef chuck roast until browned on all sides (about 4-5 minutes per side).
  3. Add the diced onions and minced garlic to the skillet; cook until fragrant (about 3 minutes).
  4. Transfer the seared beef and aromatics to your crockpot. Add carrots, potatoes, celery, tomato paste, bay leaves, thyme, salt, and pepper.
  5. Pour in the beef broth until all ingredients are submerged.
  6. Cover and set the crockpot on low heat for 7-8 hours or high heat for 4-5 hours.
  7. Taste and adjust seasoning about 30 minutes before serving. Remove bay leaves before serving.
