  • 1 cup diced bell peppers (any color)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Juice of 1 lime (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. 1. Prep your ingredients: chop onions and bell peppers and mince garlic.
  2. 2. In a skillet over medium heat, add olive oil. Sauté onions until translucent, then add bell peppers and garlic until fragrant.
