  • 2 medium sweet potatoes (about 1 lb), roasted
  • 1 cup red lentils, rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • ½ cup breadcrumbs (plain or seasoned)
  • ¼ cup fresh parsley or cilantro, chopped
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Cook the lentils in boiling water for about 15 minutes until tender but not mushy. Drain and set aside.
  2. Preheat the oven to 400°F (200°C) and roast sweet potatoes wrapped in foil for about 45 minutes until tender.
  3. In a skillet over medium heat, sauté the onion and garlic in oil until softened.
  4. In a large bowl, mash together the cooked sweet potatoes and lentils. Stir in sautéed onions, spices, breadcrumbs, herbs, salt, and pepper.
  5. Shape the mixture into small patties.
  6. Heat oil in a skillet over medium heat and fry each patty for about 3-4 minutes per side until golden brown.
