  • 1 cup ricotta cheese
  • 1 cup shredded whole-milk mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • 1 cup marinara sauce (for serving)
  • Vegetable oil (for frying)

Instructions

  1. Cook the lasagna noodles according to package instructions until al dente. Drain and cool on a clean towel.
  2. In a bowl, mix ricotta cheese, half of the mozzarella, Parmesan cheese, eggs, salt, and pepper until well blended.
  3. Spread the cheese mixture evenly along each noodle, roll tightly from one end, and place seam-side down on a plate.
  4. Heat vegetable oil in a deep skillet over medium heat until shimmering (about 350°F).
  5. Fry each roll seam-side down for about 3-4 minutes per side until golden brown. Don't overcrowd the pan; work in batches if necessary.
  6. Remove rolls from oil and drain on paper towels. Serve hot with marinara sauce for dipping.
