Chicken Taquitos are the perfect bite-sized treat for any occasion. These crispy, golden tortillas are filled with tender, spiced chicken and topped with creamy avocado and fresh cilantro.   • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp taco seasoning
  • 10 flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat the oven to 375°F (190°C). Place chicken breasts in a baking dish, sprinkle with taco seasoning, and bake for 25-30 minutes until cooked through.
  2. Shred the cooked chicken using two forks.
  3. Warm tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  4. Assemble by filling each tortilla with shredded chicken and cheese; roll tightly.
  5. Place seam-side down on a parchment-lined baking sheet, lightly spray with oil, and bake for 15-20 minutes until golden brown.
  6. Remove from oven and top with avocado slices, cilantro, and serve with sour cream.
