  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 large flour tortillas
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper.
  2. Bake the seasoned chicken in a greased dish for 25-30 minutes until fully cooked and crispy. Let cool for five minutes before shredding.
  3. In a bowl, mix shredded chicken with cooked rice, black beans, cumin, and chili powder until combined.
  4. Lay out tortillas on a clean surface. Spoon the mixture onto each tortilla and sprinkle with cheese.
  5. Roll tightly and place seam-side down on a baking sheet. Bake for an additional 5 minutes until golden brown.
  6. Serve drizzled with sour cream and salsa.
