  • 2 cups cauliflower florets
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

Instructions

  1. Prep your cauliflower by washing and cutting it into small florets. Boil in salted water for about 5 minutes until tender but firm. Drain well.
  2. In a mixing bowl, combine flour, eggs, Parmesan cheese, parsley, cumin, paprika, salt, and pepper. Mix until smooth.
  3. Gently fold the boiled cauliflower into the batter using a spatula.
  4. Heat olive oil in a skillet over medium heat. Once shimmering, pour heaping tablespoons of batter into the skillet and flatten slightly.
  5. Fry for about 3–4 minutes on each side until golden brown.
  6. Drain on paper towels and serve hot with your favorite dipping sauce.
