  • 1 medium butternut squash (about 2 cups diced)
  • 1 sheet puff pastry (thawed)
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt and pepper to taste
  • 1 egg (beaten with 1 tbsp water for egg wash)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice the butternut squash into small cubes. Toss with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  3. In a skillet over medium heat, melt butter and sauté chopped onions until translucent. Add minced garlic and cook for an additional minute.
  4. Mash the roasted butternut squash in a bowl, then stir in sautéed onions, garlic, cumin, and coriander.
  5. Roll out puff pastry on a floured surface and cut into 4-inch squares.
  6. Place a spoonful of filling in the center of each square, fold diagonally to form triangles, and seal edges with a fork.
  7. Arrange on a lined baking sheet, brush with egg wash, and bake at 375°F (190°C) for 20-25 minutes until golden brown.
