  • 1 medium eggplant (about 1 lb)
  • 1/2 cup extra virgin olive oil
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh herbs (parsley or basil) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the eggplant into rounds, about 1/2 inch thick. Sprinkle with salt and let rest for 30 minutes to draw out moisture.
  3. Rinse the slices under cold water and pat dry thoroughly with paper towels.
  4. In a bowl, mix panko breadcrumbs with garlic powder, salt, pepper, and Parmesan cheese. In another bowl, pour olive oil for dipping.
  5. Dip each eggplant slice in olive oil then coat with the breadcrumb mixture.
  6. Place on a lined baking sheet and bake for 25-30 minutes or until golden brown, flipping halfway through.
  7. Let cool slightly before serving with marinara sauce or fresh herbs.
