  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or coconut milk
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme or dill (or more to taste)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (3-5 minutes).
  2. Add chicken breast or tofu; cook until chicken is no longer pink (7-10 minutes for chicken; sauté tofu until golden brown).
