4 medium Russet potatoes (peeled and diced)
1 cup fresh or frozen green peas
1 medium onion (finely chopped)
2 garlic cloves (minced)
4 cups low-sodium vegetable broth
1 cup heavy cream or full-fat coconut milk
Salt and pepper to taste
Instructions
In a large pot, heat a splash of oil over medium heat. Sauté the onion until translucent (3-5 minutes), then add the minced garlic and cook until fragrant.
Pour in the vegetable broth and diced potatoes. Bring to a boil, then reduce heat and simmer for about 15 minutes until the potatoes are tender.
Stir in the peas and cream (or coconut milk) and simmer for an additional 5-7 minutes.
For a smoother chowder, use an immersion blender to blend to desired consistency, leaving some chunks for texture.
