  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
  2. Stir in minced garlic and sliced mushrooms; cook until softened and browned (about 5-7 minutes).
  3. Add Arborio rice to the skillet, stirring to coat each grain in oil. Toast for about 2 minutes.
  4. Gradually add warmed vegetable broth one ladle at a time, stirring continuously until nearly absorbed before adding more (about 20 minutes total).
