  • 1 medium onion, diced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 1 cup enchilada sauce
  • 1/4 cup fresh cilantro (optional)
  • 1 cup shredded cheddar cheese
