  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour

  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Cook elbow macaroni according to package instructions until al dente; drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking for about 2 minutes until golden brown.
  3. Gradually whisk in milk until smooth; stir until thickened (about 5 minutes). Mix in cottage cheese and half of the cheddar until melted.
  4. Combine cooked macaroni with the cheese sauce, stirring until evenly coated.
