  • 1 cup cooked corned beef, chopped
  • 1 cup green cabbage, shredded
  • 1 cup shredded cheese (sharp cheddar and mozzarella blend)
  • 4 medium flour tortillas
  • 2 tsp olive oil (for cooking)
  • 1 tbsp mustard (optional)
  • black pepper to taste (optional)

Instructions

  1. Prepare your ingredients by chopping the corned beef and shredding the cabbage.
  2. In a skillet over medium heat, add 1 tsp of olive oil and sauté the cabbage until wilted (about 5 minutes). Season with black pepper.
  3. On one half of each tortilla, layer corned beef, sautéed cabbage, and cheese. Fold the tortilla in half.
  4. Heat the skillet again with remaining olive oil and cook each quesadilla for about 3 minutes on each side until golden brown and crispy.
  5. Slice into wedges and serve hot with mustard on the side for dipping.
