Instructions
Rinse the corned beef under cold water to remove excess brine.
Chop the onions into thick rounds, carrots into bite-sized pieces, and quarter the cabbage.
In a large pot, place the corned beef fat-side up and cover with beef broth, ensuring it reaches about two-thirds of the meat's height.
Add smashed garlic, pickling spice, bay leaves, and black peppercorns for flavor.
Bring to a gentle boil over medium heat, then reduce to low, cover, and simmer for 2-3 hours until fork-tender.
