  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (adjust to taste)
  • 24 oz cream cheese, softened
  • 1 cup sour cream (full-fat recommended)
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 3 large eggs (room temperature)
  • 2 tbsp cornstarch

Instructions

  1. Preheat the oven to 325°F (163°C) and lightly grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the springform pan.
  3. Bake crust for about 10 minutes until golden brown; let cool.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, vanilla, cinnamon, cornstarch, and eggs one at a time.
  5. Pour half of the filling over the cooled crust. Drizzle some cinnamon mixture on top and swirl with a knife. Add remaining batter and create additional swirls.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center. Turn off oven and let it cool inside for an hour before refrigerating.
