Instructions
Make the Pie Crust: In a bowl, combine flour, sugar, salt, and baking powder. Cut in cold butter until crumbly.
Chill the Dough: Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling: Peel and slice apples; toss with sugar, cinnamon, and lemon juice. Let sit for 10 minutes.
Roll Out Dough: Divide dough in half. Roll out one half for the bottom crust.
Assemble the Pie: Place rolled dough in pie dish, fill with apple mixture, roll out second half for top crust or create lattice work.
Bake: Preheat oven to 425°F (220°C). Brush with egg wash if desired. Bake for 15 minutes; reduce heat to 350°F (175°C) and bake an additional 35-40 minutes until golden.
