  • 2 cups Cinnamon Toast Crunch cereal, crushed
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 tsp ground cinnamon
  • 2 tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Crush the Cinnamon Toast Crunch in a food processor or ziplock bag until fine. Mix with melted butter.
  2. Press the crumb mixture into a 9-inch springform pan and bake for 10 minutes. Let cool.
  3. In a bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, eggs one at a time, cinnamon, and cornstarch; mix until combined.
  4. Pour filling over the cooled crust and bake at 325°F (160°C) for 50-60 minutes until slightly jiggly in the center. Cool completely on a wire rack.
  5. Refrigerate for at least four hours before serving. Top with extra Cinnamon Toast Crunch if desired.
