  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 cup unsalted butter (softened)
  • 1 cup raisins (soaked in warm water)
  • 1 tsp salt

Instructions

  1. In a large bowl, mix the sourdough starter with warm water and flour until combined. Rest for 30 minutes.
  2. Knead the dough on a floured surface for about 10 minutes until smooth.
  3. Place the dough in an oiled bowl, cover, and let rise at room temperature for about 4 hours or until doubled.
  4. Mix brown sugar, cinnamon, and softened butter to create the filling.
  5. Roll out the risen dough into a rectangle, spread the filling evenly, and sprinkle with soaked raisins.
  6. Roll tightly into a log, pinch seams closed, and place seam-side down on a baking sheet lined with parchment.
  7. Cover lightly and let rise again for about 1 hour until puffy.
  8. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
