  • 3 cups all-purpose flour
  • 1 cup warm water (around 100°F/38°C)
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup raisins (soaked in warm water)

Instructions

  1. In a large bowl, mix the active sourdough starter and warm water until combined. Gradually add flour to form a shaggy dough.
  2. Transfer to a floured surface and knead for about 10 minutes until smooth and elastic.
  3. Place the dough in an oiled bowl, cover with a damp cloth, and let rise at room temperature for 4-6 hours until doubled in size.
  4. For the filling, mix cinnamon, brown sugar, and softened butter until smooth.
  5. Roll out risen dough into a rectangle and spread cinnamon filling evenly over it. Sprinkle soaked raisins on top.
  6. Roll tightly from one edge to form a log shape; pinch seams to seal and place seam-side down in a greased loaf pan.
  7. Cover again and let rise for another 1-2 hours until puffy.
  8. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
