  • 8 oz rotini pasta
  • 1 cup fresh cilantro, chopped
  • 1/4 cup lime juice (about 2 limes)
  • 1 cup bell peppers, diced (assorted colors)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 avocado, diced (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. While pasta cooks, chop cilantro, bell peppers, red onion, and halve cherry tomatoes.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  4. In a large bowl, combine drained pasta with chopped veggies and cilantro. Drizzle dressing over the top and toss gently to coat.
  5. Taste and adjust seasonings if necessary. Chill for about 30 minutes before serving.
