Churro cruffins are a delightful fusion of cinnamon-sugar sweetness and fluffy muffin texture, perfect for brunch or an indulgent snack. Enjoy these irresistible pastries fresh from the oven!

Ingredients

  • 2 ¼ cups (270g) all-purpose flour

  • ¼ cup (50g) granulated sugar

  • 1 teaspoon ground cinnamon

  • 1 tablespoon baking powder

  • ½ cup (113g) unsalted butter, melted

  • ¾ cup (180ml) whole milk

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • ½ cup granulated sugar + 1 tablespoon ground cinnamon (for rolling – cinnamon sugar mixture)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. Whisk together flour, sugar, baking powder, salt, and cinnamon in a bowl.
  3. Beat softened butter with sugar until fluffy; then add eggs, milk, and vanilla.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Scoop batter into muffin cups, filling each about two-thirds full.
  6. Bake for 20-25 minutes until golden brown.
  7. Roll warm cruffins in the cinnamon-sugar mixture before serving.
