Churro cookies are a delightful fusion of crispy cinnamon sugar and a soft, chewy center, making them the perfect treat for any occasion.

Ingredients

  • All-purpose flour
  • Baking powder
  • Unsalted butter
  • Granulated sugar
  • Brown sugar
  • Eggs
  • Cinnamon powder
  • Vanilla extract
  • Salt
  • Sugar & cinnamon mixture (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Cream unsalted butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  4. Beat in eggs one at a time along with vanilla extract until fully combined.
  5. Gradually mix in dry ingredients until just combined.
  6. Scoop dough into balls and roll in the cinnamon-sugar mixture.
  7. Place on baking sheets, spacing them 2 inches apart, and bake for 10-12 minutes until edges are golden.
  8. Cool on sheets for 5 minutes before transferring to wire racks.
