  • 3 boneless, skinless chicken breasts (1 lb)
  • 2 cloves fresh garlic, minced
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey

Instructions

  1. Season chicken breasts with salt, pepper, and minced garlic. Grill or pan-sear over medium heat for 6-7 minutes on each side until cooked through (165°F internal temperature). Let rest before chopping.
  2. While the chicken cools, chop mixed greens, cucumbers, cherry tomatoes, and red onion. Combine in a large bowl.
  3. In a small bowl or jar, whisk together olive oil, balsamic vinegar, and honey until combined.
  4. Once chicken has cooled, chop into bite-sized pieces and add to the veggie bowl with half of the dressing.
  5. Toss everything together until well coated. Add more dressing if desired.
  6. Serve immediately or chill before serving.
