  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 packet taco seasoning (about 2 tbsp)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • ½ cup sour cream or Greek yogurt (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a 9×13 inch baking dish with nonstick spray.
  2. In a skillet over medium-high heat, cook the chicken in olive oil until golden brown and fully cooked (6-7 minutes per side). Let cool slightly before shredding.
  3. In a large bowl, combine shredded chicken, diced tomatoes, black beans, garlic, taco seasoning, and half of the cheddar cheese; mix well.
  4. Layer half of the tortilla chips in the baking dish, followed by half of the chicken mixture. Repeat layers and top with remaining cheddar cheese.
  5. Bake for 25-30 minutes until bubbly and golden brown. Allow to cool slightly before serving; garnish with sour cream or Greek yogurt.
