  • 4 boneless, skinless chicken breasts (about 500g)
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp cornstarch
  • 2 tbsp chili sauce (adjust to taste)
  • 2 tbsp vegetable oil

Instructions

  1. Chop the bell peppers and mince the garlic and ginger.
  2. Marinate chicken in a bowl with soy sauce, cornstarch, and half of the minced garlic for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat and stir-fry the marinated chicken until golden brown (5-7 minutes).
  4. Add bell peppers and remaining garlic; stir-fry until tender-crisp (about 3 minutes).
  5. Combine chili sauce with a splash of water and pour into the skillet; stir until the sauce thickens (2 minutes).
  6. Serve hot over steamed rice or noodles.
