  • 3 cups cooked day-old rice
  • 1 lb boneless chicken breast, diced
  • 1 cup fresh peas
  • 1 cup diced carrots
  • 1 cup bell peppers, chopped
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 green onions, finely chopped
  • Salt and black pepper to taste

Instructions

  1. Prepare all ingredients by chopping the vegetables and dicing the chicken.
  2. Heat oil in a large skillet over medium-high heat. Cook the chicken until golden brown (5-7 minutes) and no longer pink inside. Set aside.
  3. Add garlic and ginger to the skillet during the last minute of cooking the chicken.
  4. Stir-fry the vegetables for about 3-4 minutes until tender but still vibrant.
  5. Push veggies aside; scramble eggs on the other side until fully cooked.
  6. Add day-old rice, soy sauce, and sesame oil to the skillet. Stir-fry everything together for about 3-5 minutes until heated through and well combined.
