  • 4 medium bell peppers (red, yellow, or green)
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 tablespoons fajita seasoning
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds; place upright in a baking dish.
  2. In a skillet over medium heat, drizzle olive oil, add chopped onions and minced garlic; sauté for about 3-4 minutes until soft.
  3. Add diced chicken and fajita seasoning; cook until golden brown and fully cooked through (6-8 minutes).
  4. Stir in diced bell pepper bits and any remaining seasoning; cook for another 2-3 minutes.
  5. Generously fill each pepper with the chicken mixture and pack down slightly.
  6. Cover with foil and bake for 30 minutes. Remove foil, top with cheddar cheese, and bake an additional 10 minutes until cheese is bubbly.
