  • 8 oz fettuccine or penne pasta
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 4 oz cream cheese
  • 1 cup low-sodium chicken broth
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream

Instructions

  1. Slice bell peppers and onion.
  2. Heat olive oil in a large skillet over medium heat; sauté diced chicken with fajita seasoning until golden brown (6-8 minutes).
  3. Add sliced onions and bell peppers to the skillet; cook until softened (about 5 minutes).
  4. Boil water in another pot; cook pasta according to package instructions until al dente, reserving some pasta water before draining.
  5. Combine cooked pasta with chicken and veggies in the skillet; mix in cream cheese and chicken broth until creamy.
  6. Adjust consistency with reserved pasta water if needed, top with shredded cheese, and let melt before serving.
