  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup white vinegar (preferably cane vinegar)
  • 6 cloves garlic (crushed)
  • 2 bay leaves
  • 1 tsp whole peppercorns
  • 1 medium yellow onion (sliced)
  • 1 cup water
  • 2 tbsp cooking oil

Instructions

  1. Gather and prep all ingredients: rinse the chicken, chop onions, and crush garlic.
  2. In a large pot over medium heat, add oil and sauté sliced onions until translucent. Add crushed garlic and cook until fragrant.
  3. Add chicken thighs to the pot; sear until golden brown on all sides.
  4. Pour in soy sauce and vinegar; add bay leaves and peppercorns. Stir well.
  5. Add water to cover chicken halfway; bring to a boil then reduce heat to low. Cover and simmer for about 30 minutes until chicken is tender.
  6. Adjust seasoning if needed before serving hot over steamed rice.
