  • ½ cup cherry preserves
  • 1 cup powdered sugar (for frosting)
  • 1 cup heavy cream (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cream softened butter until smooth, then gradually add sugar until fluffy (3-5 minutes).
  4. Beat in the eggs one at a time along with vanilla extract until fully combined.
  5. Alternate adding dry ingredients and milk to the wet mixture until just combined; do not overmix.
  6. Gently fold in cherry preserves.
  7. Fill cupcake liners about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  8. For frosting, whip heavy cream to soft peaks, gradually mixing in powdered sugar to desired sweetness.
  9. Once cupcakes are cool, pipe or spread frosting on top.
