Cheesecake stuffed chocolate chip cookies are a heavenly blend of soft, chewy cookie dough and creamy cheesecake filling. Perfect for sharing, they make any occasion feel special.

Ingredients

For the Cheesecake Filling:

  • Cream cheese (softened): 170 g (6 oz or 3/4 cup)

  • Granulated sugar: 50 g (1/4 cup)

  • Vanilla extract: 1/2 teaspoon

  • Egg yolk: 1

For the Chocolate Chip Cookie Dough:

  • All-purpose flour: 280 g (2 1/4 cups)

  • Baking soda: 1/2 teaspoon

  • Salt: 1/2 teaspoon

  • Unsalted butter (softened): 170 g (3/4 cup)

  • Granulated sugar: 100 g (1/2 cup)

  • Brown sugar (packed): 150 g (3/4 cup)

  • Egg: 1 whole

  • Egg yolk: 1

  • Vanilla extract: 2 teaspoons

  • Chocolate chips: 300 g (1 3/4 cups)

Note: If you’re using store-bought cookie dough, you can skip the cookie dough part above — just use 1 lb (450 g) of dough and go straight to stuffing!

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy.
  2. Chill the filling in the refrigerator for 30 minutes.
  3. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. Scoop cookie dough, flatten slightly, place a teaspoon of the chilled cheesecake filling in the center, and fold the dough over it.
  5. Bake filled cookie balls on prepared sheets for 12-15 minutes until edges are golden but centers remain soft.
  6. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks.
