  • 4 boneless, skinless chicken breasts (about 680g)
  • 3 cloves fresh garlic, minced
  • 3 tbsp harissa paste
  • 2 tbsp pure honey
  • Salt and pepper to taste
  • 1 cup couscous or quinoa (about 170g)
  • 2 cups mixed vegetables (bell peppers, cucumbers, cherry tomatoes)

Instructions

  1. Marinate the chicken by mixing harissa paste, honey, garlic, salt, and pepper in a bowl. Add chicken breasts and let them soak for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Place marinated chicken on the baking sheet and bake for 25-30 minutes until cooked through (165°F/75°C internal temperature).
  4. While the chicken bakes, cook couscous or quinoa according to package instructions.
  5. After the chicken has rested for five minutes, slice it into bite-sized pieces.
  6. Assemble bowls by layering couscous/quinoa first, followed by mixed vegetables and sliced chicken on top.
