Cauliflower Chicken Fried Rice is a light and flavorful twist on a classic favorite.   • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups cauliflower florets (finely chopped)
  • 1 cup bell peppers (diced)
  • 1 cup peas
  • 1 cup carrots (diced)
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Chop chicken and vegetables into small pieces. Finely chop cauliflower until rice-sized.
  2. Heat a large skillet over medium-high heat with a splash of oil. Cook chicken for 5-7 minutes until golden brown and cooked through; remove and set aside.
  3. In the same skillet, sauté bell peppers, peas, and carrots for about 3-4 minutes until tender.
  4. Add cauliflower to the skillet and mix well; cook for an additional 5 minutes.
  5. Push the cauliflower mixture aside, scramble eggs in the empty space until fully cooked, then incorporate into the mixture.
  6. Stir in soy sauce and sesame oil; serve hot with optional green onion garnish.
