Ingredients

For the Carrot Cake:

  • 1 ¾ cups (220g) all-purpose flour

  • ¾ cup (150g) granulated sugar

  • 1 ½ teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon salt

  • ½ cup (120ml) vegetable oil

  • 2 large eggs

  • 2 cups (200g) freshly shredded carrots (not pre-packed)

For the Cream Cheese Frosting:

  • 8 oz (226g) cream cheese, softened

  • ¼ cup (57g) unsalted butter, softened

  • 1 cup (120g) powdered sugar (add more to thicken if needed)

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine oil and eggs. Stir in shredded carrots.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  6. While cooling, prepare frosting by beating cream cheese and butter until smooth; gradually add powdered sugar and vanilla.
  7. Once cakes are cool, frost between layers and on top.
