Description

Burrata & Oven Roasted Tomato Salad is a fresh, flavorful dish that pairs creamy burrata with sweet roasted tomatoes and fragrant basil, perfect for any summer gathering.


Ingredients

  • 8 oz fresh burrata
  • 2 cups cherry tomatoes (about 1 pint)
  • 1/4 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the cherry tomatoes on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast the tomatoes for 20-25 minutes until blistered.
  4. Tear the basil into bite-sized pieces and place it in a serving bowl.
  5. Once roasted, add the tomatoes (with their juices) to the bowl, then gently top with burrata.
  6. Drizzle balsamic vinegar over the salad and serve immediately.
