8 oz fresh burrata
2 cups cherry tomatoes (about 1 pint)
1/4 cup fresh basil leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Spread the cherry tomatoes on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
Roast the tomatoes for 20-25 minutes until blistered.
Tear the basil into bite-sized pieces and place it in a serving bowl.
Once roasted, add the tomatoes (with their juices) to the bowl, then gently top with burrata.
Drizzle balsamic vinegar over the salad and serve immediately.
