- 8 oz fresh burrata
- 2 cups cherry tomatoes (about 1 pint)
- 1/4 cup fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the cherry tomatoes on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast the tomatoes for 20-25 minutes until blistered.
- Tear the basil into bite-sized pieces and place it in a serving bowl.
- Once roasted, add the tomatoes (with their juices) to the bowl, then gently top with burrata.
- Drizzle balsamic vinegar over the salad and serve immediately.
