  • 3 cups shredded cooked chicken breast
  • 1 cup frozen chopped spinach (thawed and drained)
  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup buffalo sauce
  • 2 cloves garlic (minced)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an oven-safe baking dish.
  2. In boiling water or chicken broth, cook chicken breasts until no longer pink (15-20 minutes), then shred.
  3. Sauté minced garlic in olive oil until fragrant, then add thawed spinach.
  4. In a bowl, combine shredded chicken, sautéed spinach and garlic, cream cheese, sour cream, buffalo sauce, and cheddar cheese; mix until smooth.
  5. Transfer the mixture into the greased baking dish and bake uncovered for 25-30 minutes or until bubbly and golden brown.
  6. Allow to cool slightly before serving with tortilla chips or sliced veggies.
