Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, and sugar. In another bowl, beat eggs until frothy and mix in melted butter. Combine both mixtures gently.
  3. Spread the batter evenly in the prepared pan and bake for 12-15 minutes or until a toothpick comes out clean.
  4. Once baked, let cool slightly, then roll the cake in a clean kitchen towel from one edge and allow it to cool completely.
  5. For ganache, heat heavy cream until simmering, pour over chopped chocolate, let sit for a few minutes, then stir until smooth.
  6. Unroll the cooled cake carefully, spread ganache inside, roll tightly again, cover with remaining ganache, chill until set.
  7. Dust with powdered sugar before serving.
